The Best Crepe and Galettes in The French Riviera May Just Come From a Street Vendor Named Celine

The weekly Valbonne market is quite the spectacle. Vendors from across the French countryside set up to sell their wares, fresh produce, and fun items on streets that feel like they were pulled from a storybook. Even the most mundane experiences have a hint of magic to them. Though the La Peetch team doesn’t always get an opportunity to stop in, we make it there multiple times a month and are so pleased to see the rotating cast when we do. And several of these vendors have come to be close friends with us, or at least have made our trips to the market all the more spectacular.

One such exceptional purveyor is Celine. She sets up every Friday at the weekly Valbonne market to prepare and sell crepes and galettes. (For those who are unfamiliar, a galette is essentially a savory crepe made with buckwheat batter.) Watching her work is absolutely mesmerizing, and we love bringing cooking students to experience her charm. Over time, we have come to learn that Celine learned to make crepes and galettes in Bretagne (Brittany to Anglophones) and has been making them at a professional capacity for about twenty years.

The scent of Celine’s fresh-baked treats literally wafts down the streets, and gently pulls every last tourist and straggler in. In June of 2019, Makenna and Chris were delighted to have a selection of Celine’s galette and crepe creations at their wedding on the La Peetch property.

Celine’s talents translate well into an educational experience. This past cooking school season, the La Peetch team was honored enough to have her join us to teach our students the art of crepe and galette creation. Now, our students get to take home these delectable recipes from the actual cobblestone streets of the Valbonne market, living out a true French fairytale. We picked up a few delicious tidbits ourselves, but nothing could keep us from visiting Celine every time we step foot into that market.

Makenna Held is a hospitality entrepreneur who is based in the South of France, where she runs multiple hospitality projects including the Courageous Cooking School, La Peetch, and a soon to open concept restaurant. She can be found cavorting around the world leading RecipeKick Adventures; teaching recipe-free cooking online on RecipeKick; is a TV host of La Pitchoune: Cooking in France on Magnolia Network and Max; and a cookbook author on Simon Element, her first book is Mostly French.

She’s likely best known for buying Julia Child’s former vacation home La Pitchoune/La Peetch site unseen.
